The Classic Croque Madame

  • 2 slices Abbott’s Bakery® White Sourdough (toasted)
  • 100g shaved leg ham
  • 40g grated four cheese mix
  • 40g Brie cheese, sliced
  • 1 egg
  • 1 tbs pear and quince paste
  • 1 tbs Chutney
  • 1 tbs unsalted butter
  • Cracked pepper
  • Chopped Parsley


  1. Place 1 slice of Abbott’s Bakery® Sourdough White onto a clean work surface. Spread slice with quince paste, top with ham slices, brie and cheese mix. Replace with remaining bread slice on top.
  2. Heat half the butter in a frying pan over medium high heat. Add sandwich and cover with a lid, cook for 2 minutes each side. Until cheese has melted and bread is toasted.
  3. While sandwich is cooking, heat remaining butter in a small pan over medium heat and crack 1 egg into the pan. Cook for 2-3 minutes till the whites are set and the yolk is still runny.
  4. Serve sandwich with an egg on top. Sprinkle with cracked pepper and parsley leaves.
