Summer Pomegranate and Halloumi Toast

2 slices Abbott’s Bakery® Light Rye
½ avocado, deseeded and mashed
Squeeze of lemon juice
3 slices of halloumi
1 tbs pomegranate seeds
Mint leaves, black sesame seeds
1 tsp of honey drizzle, to serve


  1. Toast Abbott’s Bakery® Light Rye to your liking.
  2. Meanwhile, heat an oiled frypan over medium high heat and fry the halloumi for 1-2 minutes each side, or until golden. Remove from pan and set aside.
  3. Place the toast onto a serving plate, spread with prepared mashed avocado.
  4. Drizzle with lemon juice, then top with halloumi and pomegranate seeds.
  5. Sprinkle with small mint leaves, black sesame seeds and a drizzle of honey. Season with salt and pepper
