Ingredients
- 2 slices Abbott’s Bakery® Light Rye bread
- ¼ avocado, flesh mashed
- 1 tbs whole egg mayonnaise
- 1 tsp lemon juice
- 1 tsp finely chopped dill
- 2 medium Bocconcini, sliced
- ¼ small bunch watercress, sprigs removed
- 15g alfalfa
- ¼ large Lebanese cucumber, sliced
- ¼ large zucchini, thinly sliced
Method
- Combine avocado, mayonnaise, lemon juice, dill, salt and white pepper in a bowl.
- Place 1 slice Abbott’s Bakery® Light Rye bread onto a chopping board.
- Spread half the avocado mixture onto slice of bread. Top with sliced Bocconcini, watercress, alfalfa, zucchini and cucumber.
- Spread remaining avocado mixture onto one side of remaining slice of bread.
- Place avocado side down over filling. Halve sandwiches (square) and serve.
